Ingredients
- 750 g butternut squash, peeled and cubed
- 2 onions, finely chopped
- 2 cloves garlic, minced
- 500 ml vegetable broth
- 500 ml water
- 1⁄4 tsp ground nutmeg
- 3 tbsp cream (optional for garnish)
- Salt and pepper, to taste
Method
- In a large pot, bring the vegetable broth and water to a boil. Add the cubed butternut squash, chopped onions, and minced garlic to the pot.
- Once the mixture reaches a boil, reduce the heat and let it simmer for 15 minutes, or until the butternut squash is soft and tender.
- After the vegetables are cooked, remove them from the pot, keeping the broth aside. Blend the vegetables into a smooth puree using a blender or immersion blender. Gradually add the reserved broth until you achieve your desired consistency.
- Stir in the ground nutmeg, and season the soup with salt and pepper to taste. Reheat the soup on low heat if necessary.
- Ladle the soup into bowls and drizzle each serving with a swirl of cream, if desired. Serve with warm, crusty bread.
