Ingredients
- 1 whole chicken, cut into pieces
- 2 cloves garlic, finely chopped
- 1 lemon, zested and juiced
- 2 tbsp vegetable oil
- 2 tbsp butter
- 1/4 cup fresh parsley, chopped
- Salt, to taste
- Pepper, to taste
Method
- Begin by cutting the chicken into bite-sized pieces. Finely chop the garlic and parsley. Zest the lemon to get 1 tablespoon of zest and then squeeze out 2 tablespoons of lemon juice.
- Heat the vegetable oil in a large skillet over high heat. Working in batches, add the chicken pieces and sear them on all sides until golden brown. Transfer the browned chicken to a plate.
- Reduce the heat to medium and add the chopped garlic to the skillet. Cook, stirring frequently, for about 30 seconds until fragrant.
- Pour in the lemon juice, then add the butter and chopped parsley. Stir and let the mixture heat through for about 1 minute.
- Return the seared chicken pieces to the skillet, adding the lemon zest and seasoning with salt and pepper to taste. Cook, stirring occasionally, for about 5 minutes, or until the chicken is cooked through and fully coated with the lemon-garlic sauce.
