Ingredients

  • 1 kg pork tenderloin
  • 1 orange
  • 2 tbsp clarified butter
  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 30 ml lemon juice
  • 3 tbsp honey
  • 1 tbsp soy sauce
  • Salt, to taste
  • Ground black pepper, to taste

Method

  1. Preheat your oven to 230°C (450°F). Season the pork tenderloin with salt and pepper. Heat the clarified butter in a large skillet over medium-high heat. Sear the pork on all sides until it develops a golden-brown crust.
  2. Transfer the seared pork tenderloin to a baking dish. Place it in the preheated oven and roast for 30 minutes. Then, reduce the oven temperature to 180°C (350°F) and continue to roast for an additional 40 minutes, or until the internal temperature of the pork reaches 70°C (160°F).
  3. While the pork is roasting, prepare the honey glaze. In a small saucepan, combine the lemon juice, orange juice, soy sauce, honey, unsalted butter, and minced garlic. Heat over medium heat until the mixture is well combined and slightly thickened.
  4. During the last 10 minutes of roasting, brush the pork tenderloin with the honey glaze, basting it frequently to build up a glossy layer of flavor.
  5. Once cooked, remove the pork tenderloin from the oven and let it rest for 10 minutes before slicing. Serve with the remaining glaze drizzled over the top.
