Lentil Curry is a flavorful and hearty dish that’s perfect for a comforting meal. This recipe combines tender lentils with aromatic spices and creamy coconut milk to create a delicious and satisfying curry.
Ingredients
- 400 g orange lentils
- 400 g coconut milk
- 1 onion
- 13 g fresh ginger
- 2 cloves garlic
- 3 tablespoons tomato puree
- 17 g refined vegetable oil
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1 teaspoon curry powder
- 10 g salt
- 30 g fresh herbs (such as cilantro or parsley)
Method
- Rinse the lentils under cold water and soak them for 10 minutes. Meanwhile, peel and finely dice the onion.
- Peel the ginger and cut it into thin slices lengthwise. Then cut the slices into thin strips and finally into small cubes. Crush, peel, and finely chop the garlic.
- Heat the vegetable oil in a heavy-bottomed pan. Add the cumin seeds and mustard seeds, and cook, stirring frequently, for 1 minute until they start to pop.
- Add the diced onion, ginger, and garlic to the pan. Cook, stirring often, until the onion becomes soft and translucent, about 3 minutes.
- Stir in the curry powder and cook for 15 seconds. Add the tomato puree and cook, stirring, for another minute. Drain most of the water from the soaked lentils and add them to the pan along with the remaining soaking water. Bring to a boil and cook for 4–5 minutes.
- Pour in the coconut milk, add salt, and stir well. Cook on high heat until the lentils are tender, about 7 minutes. Garnish with fresh herbs and serve with rice.
