Ingredients

- All-purpose flour: 1 cup
- Sugar: 1⅕ cups
- Butter: 80 g (softened)
- Chocolate (dark or semi-sweet): 90 g (chopped)
Method
- Prepare the dough base: In a mixing bowl, combine 80 g of softened butter and 1⅕ cups of sugar. Using a spoon or hand mixer, blend until smooth and creamy. Add 1 egg to the mixture and continue beating until fully incorporated and the mixture becomes light and fluffy.
- Incorporate the flour: Gradually sift 1 cup of all-purpose flour into the butter mixture, stirring as you go. Continue mixing until a smooth dough forms. Once mixed, place the dough in the refrigerator to chill for 20-30 minutes, which helps to firm it up for shaping.
- Prepare the chocolate: While the dough is chilling, chop 90 g of chocolate into small chunks using a chef’s knife. You can use chocolate chips instead, but freshly chopped chocolate melts more evenly and gives larger, gooey pockets of chocolate in the cookies.
- Prepare the baking sheet: Line a baking sheet with parchment paper to prevent sticking and ensure even baking.
- Form the cookies: Remove the dough from the refrigerator and gently fold in the chopped chocolate. Scoop out portions of dough, about the size of a tablespoon, and roll them into small balls.
