Method

  1. Prepare the dough base: In a mixing bowl, combine 80 g of softened butter and 1⅕ cups of sugar. Using a spoon or hand mixer, blend until smooth and creamy. Add 1 egg to the mixture and continue beating until fully incorporated and the mixture becomes light and fluffy.
  2. Incorporate the flour: Gradually sift 1 cup of all-purpose flour into the butter mixture, stirring as you go. Continue mixing until a smooth dough forms. Once mixed, place the dough in the refrigerator to chill for 20-30 minutes, which helps to firm it up for shaping.
  3. Prepare the chocolate: While the dough is chilling, chop 90 g of chocolate into small chunks using a chef’s knife. You can use chocolate chips instead, but freshly chopped chocolate melts more evenly and gives larger, gooey pockets of chocolate in the cookies.
