Lebanese Lentil Salad is a hearty and flavorful dish that brings together earthy lentils with fresh herbs, tangy lemon juice, and a hint of cinnamon. It’s a perfect option for a healthy and satisfying meal, packed with protein and nutrients. Serve it chilled for a refreshing bite.
Ingredients
- 3 cups of water
- 1 cup green lentils
- 20 g chopped parsley
- 1/2 bunch fresh mint
- 1 teaspoon ground cinnamon
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Ground black pepper, to taste
- 1/4 red onion, chopped
- 4 tomatoes, chopped
- 1 teaspoon sea salt
Method
- In a medium saucepan, combine lentils and 3 cups of water. Bring to a boil, reduce heat, cover, and simmer for about 30 minutes, or until the lentils are tender. Drain and rinse with cold water until cooled.
- While the lentils are cooking, chop the tomatoes, red onion, parsley, and mint. Place them in a medium-sized bowl.
- Once the lentils have cooled, add them to the bowl with the vegetables. Drizzle with olive oil, lemon juice, and sprinkle with sea salt, black pepper, and cinnamon. Mix well to combine.
- Serve the salad chilled and enjoy.
