Niçoise Salad is a classic French dish known for its vibrant colors and hearty ingredients. This salad features fresh vegetables, tender potatoes, and flavorful tuna, making it an ideal choice for a light summer dinner or a festive gathering. Its balance of proteins and carbohydrates provides a satisfying meal without feeling heavy.
Ingredients
- 2 medium potatoes
- 400 g canned white beans, drained
- 200 g green beans, trimmed
- 2 cans (185 g each) canned tuna
- 8 cherry tomatoes, halved
- 100 g pitted olives, sliced
- 2 heads of lettuce
- 2 large eggs
- Salt, to taste
For the dressing:
- 1 clove garlic, minced
- 4 tablespoons olive oil
- 1 teaspoon sugar
- 2 teaspoons coarse-grained mustard
- 2 tablespoons white wine vinegar
Method
- In a bowl, combine the minced garlic, mustard, sugar, white wine vinegar, and olive oil. Season with salt and pepper to taste. Cover and let the dressing sit for about 15 minutes to allow the flavors to meld.
- Wash the potatoes and boil them in their skins until tender. Hard boil the eggs. Prepare the green beans by boiling them for about 6 minutes, then immediately transfer them to an ice water bath to cool. Drain well.
- Drain the white beans and olives. Cut the olives into rings.
- Drain the canned tuna and break it into large pieces with a fork.
- Wash and dry the lettuce leaves, then arrange them in a large serving bowl or plate. Drizzle with 2 tablespoons of the dressing.
- Cut the boiled potatoes and eggs into wedges. Halve the cherry tomatoes. Arrange the potatoes, eggs, and tomatoes around the edges of the salad bowl.
- Toss the white beans and green beans with the olives and place them in the center of the salad. Top with the pieces of tuna and drizzle with the remaining dressing.
