Stuffed peppers are a classic dish that is both comforting and satisfying. They are perfect for home cooking, especially in the summer when peppers are in season. This recipe features tender peppers filled with a flavorful mixture of ground meat and rice, making for a hearty meal that everyone will enjoy.
Ingredients
- 12 bell peppers (red)
- Vegetable oil (for frying)
For the filling:
- 700 g ground meat (beef, pork, or a mix)
- 150 g white rice
- 4 sprigs of fresh parsley
- 4 sprigs of fresh dill
- 1 onion
- Black pepper (to taste)
- Salt (to taste)
For the sauce:
- 4 sprigs of fresh parsley
- Salt (to taste)
- 700 ml cream (23% fat)
- 4 sprigs of green onions
- Black pepper (to taste)
- 2 tablespoons tomato paste
- 4 sprigs of fresh dill
- 3 cloves of garlic
Method
- Prepare the bell peppers by cutting off the tops and removing the seeds. Keep the tops for later use.
- Rinse the rice thoroughly and cook it in boiling salted water for about 7 minutes until it’s partially cooked. Drain the rice and set aside.
- Finely chop the onion and sauté it in vegetable oil until golden brown. Add the chopped parsley and dill, cooking for an additional minute.
- In a mixing bowl, combine the cooked rice, ground meat, sautéed onion, and herbs. Season with salt and pepper to taste.
- Stuff the prepared bell peppers with the meat and rice mixture, placing the reserved tops back on each pepper. Arrange the stuffed peppers in a pot for cooking.
- For the sauce, finely chop the onion and garlic, then sauté them in oil for 2 minutes. Add the tomato paste, cream, and season with salt and pepper. Cook the sauce over low heat for 7 minutes, then stir in the chopped herbs and remove from heat.
- Pour the sauce over the stuffed peppers and cover the pot. Cook on medium heat for about 35 minutes.
- Allow the dish to cool for a few minutes before serving. Enjoy your delicious stuffed peppers!
