Ingredients
- 40g chicken broth
- 40g water
- 6g chili paste
- 1 teaspoon sugar
- 1 teaspoon sesame oil
- 120g coconut milk
- 15g butter
- 2g galangal (or ginger)
- 3g dried lemongrass
- 60g chicken thigh fillet, cut into small pieces
- 25g fresh mushrooms, sliced
- 2-3 asparagus stalks, cut into segments
- 3 cherry tomatoes, halved
- Green onions for garnish
Method
- In a saucepan, combine the chicken broth, water, chili paste, sugar, sesame oil, and coconut milk. Mix well and heat until the sugar dissolves, then reduce the heat to low.
- In a skillet, melt the butter over medium heat. Add the sliced galangal and dried lemongrass, sautéing for about a minute until fragrant.
- Add the chicken thigh pieces to the skillet and cook until they are lightly browned.
- Stir in the sliced mushrooms, asparagus segments, and halved cherry tomatoes.
- Transfer the mixture to the saucepan with the broth and allow it to heat for about a minute.
- Serve the soup hot, garnished with sliced green onions.
