Ratatouille is a traditional French dish that celebrates the simplicity of seasonal vegetables. With its vibrant colors and rich flavors, this rustic meal has gained worldwide popularity. Ingredients
- 1 large zucchini (or 2 small ones)
- 1 large eggplant (or 2 medium ones)
- 3-4 tomatoes
- Dried oregano
- Olive oil
- Salt and black pepper
For the sauce:
- 3-4 peeled and diced tomatoes (or 200-300g canned tomatoes/tomato sauce)
- 2-3 garlic cloves, minced
- 3-4 fresh basil leaves (or ½ tsp dried basil)
- 1 tbsp olive oil
- Salt and black pepper
Method
- Prepare the sauce: Heat a pan over medium heat and add a bit of olive oil. Add the diced fresh tomatoes (or canned tomatoes) and stir in the minced garlic and chopped basil. Season with salt, pepper, and a sprinkle of oregano. Let the sauce simmer for 4-5 minutes, stirring occasionally until it thickens slightly.
- Assemble the ratatouille: Pour the prepared tomato sauce into a 28cm round baking dish, spreading it evenly across the bottom. While the sauce cools slightly, slice the eggplant, zucchini, and tomatoes into thin rounds. Try to keep the vegetables at a similar thickness for even cooking.
- Arrange the vegetables: Layer the sliced vegetables in a fan pattern over the sauce, alternating between eggplant, zucchini, and tomato slices. Continue arranging them until the entire dish is filled.
- Season and bake: Sprinkle a little salt, dried oregano, and drizzle olive oil over the top of the vegetables. Preheat your oven to 200°C (400°F) and bake the ratatouille for 30-35 minutes, or until the vegetables are tender and slightly golden.
- Serve: Remove from the oven and allow the ratatouille to cool for a few minutes before serving. It pairs beautifully with mashed potatoes, grilled meat, fish, or simply fresh bread. Bon appétit!
