Ingredients
- 2 medium heads of garlic
- 2 teaspoons olive oil
- 1 kg red potatoes, quartered
- Salt and freshly ground black pepper
- ½ cup low-fat milk
- ¼ cup heavy cream
- ¼ cup butter, cubed (or more, if desired)
- Fresh parsley, chopped (optional, for garnish)
Method
- Roast the Garlic:
- Preheat your oven to 200°C (400°F). Trim about 1 cm off the top of the garlic heads to expose the cloves.
- Place each head on a piece of foil, drizzle with 1 teaspoon of olive oil, and wrap the foil around the garlic. Roast in the oven for 40-45 minutes, until the cloves are soft and golden. Let the garlic cool, then squeeze the cloves out into a small bowl and mash with a fork.
- Cook the Potatoes:
- While the garlic is roasting, place the quartered potatoes in a large pot and cover them with cold water. Add 1 tablespoon of salt. Bring the water to a boil over medium heat, then reduce the heat to low and cover the pot. Simmer for about 20 minutes, or until the potatoes are tender and can be easily pierced with a fork.
- Prepare the Milk Mixture:
- In a microwave-safe bowl, combine the milk, heavy cream, and butter. Microwave on high for 45-60 seconds, or until the mixture is hot and the butter is melted.
- Mash the Potatoes:
- Drain the potatoes and return them to the pot. Mash them with a potato masher, leaving some small chunks for texture if desired.
- Stir in the hot milk mixture and mashed roasted garlic. Season with salt and freshly ground black pepper to taste.
- Serve:
- Serve the garlic mashed potatoes immediately, garnished with fresh parsley and an extra pat of butter if you like.
