Ingredients
- 2 chicken breasts (sliced into thin fillets)
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 4 tbsp butter
- 4-5 tbsp vegetable oil
- 2 tbsp capers
- Juice of half a lemon
- Zest of one lemon
- 250 ml water or chicken broth
- Flour for coating the chicken
- Fresh parsley, chopped
- Salt and black pepper to taste
Method
- Slice each chicken breast in half horizontally to create thinner fillets. Season with salt and pepper, then dredge in flour.
- Heat 1 tbsp of butter and 2 tbsp of vegetable oil in a skillet over medium-high heat. Sear the chicken for about 2 minutes per side until golden brown. Set the chicken aside on a plate.
- In the same skillet, add the remaining butter and oil. Sauté the chopped onion until softened, then stir in the minced garlic and cook briefly until fragrant.
- Add the water (or chicken broth) and let it simmer for 3-4 minutes. Stir in the lemon juice, zest, capers, and parsley. Season with salt and pepper.
- Return the chicken fillets to the skillet, letting them heat through in the sauce for another few minutes.
- Serve hot, spooning the lemon butter sauce over the chicken. Enjoy this deliciously tangy and savory dish!
