This vibrant and healthy Rainbow Veggie Salad is a great way to enjoy fresh vegetables in a colorful and delicious mix. It’s quick to prepare, packed with nutrients, and perfect as a side dish or light meal.
Ingredients
- 1 yellow tomato (80g)
- 1 red tomato (90g)
- 1 cucumber (120g)
- 1 bell pepper (150g)
- 200g cabbage
- Ground black pepper, to taste
- Salt, to taste
- 3 tablespoons olive oil
Method
- Wash all the vegetables thoroughly. Clean the bell pepper, removing seeds, and slice it into thin strips.
- Cut the yellow and red tomatoes into bite-sized pieces. Add them and the sliced bell pepper to a large salad bowl.
- Slice the cucumber into thin rounds or quarter them, depending on your preference, and transfer to the salad bowl.
- Finely shred the cabbage and lightly squeeze it with your hands to release some juice, then add to the salad.
- Season with salt and ground black pepper, and drizzle with olive oil. Toss everything together until well combined.
