Classic American Potato Salad is a beloved dish that brings comfort and flavor to any gathering. Creamy, tangy, and filled with savory ingredients, it’s a staple at barbecues, picnics, and potlucks. This recipe is simple to follow, making it easy for anyone to prepare this delicious salad.
Ingredients
- 1 kg young potatoes
- 100 g bacon
- Salt, to taste
- Freshly ground black pepper, to taste
- 1 tablespoon apple cider vinegar or pickle brine
- 1 tablespoon whole grain mustard
- 4-5 pickled gherkins
- 3 tablespoons vegetable oil
- 1 large sweet white onion
Method
- Cook the potatoes: Rinse the potatoes thoroughly with a brush. Place them whole in a pot of salted boiling water. Bring to a boil and cook for about 25-30 minutes, or until tender.
- Prepare the bacon: While the potatoes are cooking, slice the bacon into thin strips. In a dry skillet over medium heat, cook the bacon until the fat is rendered and the bacon is crispy. Once done, transfer the bacon to a paper towel-lined plate to drain, but keep the rendered fat in the pan.
- Slice the vegetables: Finely chop the sweet onion into thin quarter rings. Slice the pickled gherkins into thin rounds.
- Make the dressing: In the skillet with the reserved bacon fat, add vegetable oil, apple cider vinegar (or pickle brine), whole grain mustard, salt, and black pepper. Stir to combine.
- Combine the salad: Once the potatoes are cooked, drain them and allow them to cool slightly. Cut the potatoes into bite-sized pieces (be careful not to burn yourself) and place them in a mixing bowl. Pour the warm dressing over the potatoes and let it cool.
- Mix everything: Add the sliced onions, gherkins, and crumbled bacon to the potatoes. Gently mix to combine all the ingredients.
