Pickled Carrot Noodles are a delightful and tangy side dish inspired by the popular Korean-style carrot salad. This vibrant dish is not only easy to prepare but also adds a refreshing crunch to any meal. Ingredients
- 1 kg carrots
- 1 tsp salt
- 1 tsp sugar
- 1 tsp freshly ground black pepper
- 1 tsp ground coriander
- ½ tsp turmeric
- ½ tsp mustard seeds
- 1 tsp marjoram
- 2 cloves garlic
- 50 ml apple cider vinegar
- 80 ml vegetable oil
Method
- Start by peeling the carrots and then grate them using a Korean-style grater to create thin noodles.
- In a large bowl, sprinkle the grated carrots with salt and mix well.
- Create a small well in the center of the carrots and add the sugar.
- Press the garlic cloves through a garlic press and add them to the carrots.
- Lightly toast the coriander seeds in a pan, then crush them and add to the mixture.
- Heat the vegetable oil in a separate pan until it starts to shimmer (do not let it boil). Once hot, remove from heat and pour it over the carrot mixture.
- Add the apple cider vinegar to the carrots and mix everything thoroughly.
- Pack the carrot mixture into a clean jar and pour any excess juice over the top.
- Seal the jar and place it in the refrigerator for 24 hours to allow the flavors to meld.
