Shuba, also known as “Herring Under a Fur Coat,” is a traditional layered salad popular in Ukraine, especially during New Year celebrations. This dish originated in Russia in the early 20th century and has since spread throughout the former Soviet Union. With layers of pickled herring, vegetables, and mayonnaise, Shuba is a colorful and flavorful addition to any festive table.
Ingredients
- 700 g pickled herring
- 1 onion
- 3 boiled potatoes
- 3 boiled beets
- 2 boiled carrots
- 2 eggs
- 200 g mayonnaise
- 2 tbsp apple cider vinegar
- Salt to taste
Method
- Begin by preparing the herring. Remove the head, tail, and fins, and make a slit along the belly to clean it thoroughly.
- Cut along the back to remove the skin, then gently separate the fish into two halves. Carefully extract the backbone and all small bones from each fillet.
- Boil the potatoes, carrots, beets, and eggs until fully cooked. Allow the potatoes, beets, and carrots to cool, then peel and grate them into separate bowls.
- Dice the herring fillet and the onion into small cubes.
- In a deep serving dish, start layering the salad. If using a high container, you can repeat the layers. Begin with a layer of herring at the bottom.
- Follow the herring with a layer of diced onion, then the grated potatoes. You can either spread a layer of mayonnaise over the potatoes or use a decorative mayonnaise drizzle to reduce the salad’s fat content.
- Next, add the grated carrots, followed by another layer of mayonnaise, and then the grated beets with another layer of mayonnaise on top.
- For decoration, you can use grated eggs or just the yolks on the top layer. Cover the salad tightly and refrigerate overnight to allow the flavors to meld.
