BBQ Pulled Pork Sandwiches are a delicious and satisfying option for any gathering or casual meal. Ingredients

  • 700g pork tenderloin (about 2 pieces)
  • 300g mozzarella (sliced)
  • 12 slices of whole-grain bread
  • 1 large bunch of spinach
  • 5 garlic cloves (minced)
  • ½ teaspoon chili flakes
  • 3 tablespoons olive oil
  • ½ sprig of rosemary (chopped)
  • Salt and freshly ground black pepper, to taste

Method

  1. Marinate the Pork:
    • In a bowl, mix ¾ of the minced garlic, chopped rosemary, 3 tablespoons of olive oil, salt, and pepper.
    • Clean the pork tenderloin by removing any excess fat or silver skin, and then coat it with the prepared marinade. Cover and refrigerate for 2 hours. Allow the pork to sit at room temperature for 1 hour before cooking.
  2. Grill the Pork:
    • Prepare the grill by heating the coals until they are covered with a light layer of ash.
    • Place the marinated pork on the oiled grill grate and cook for about 15 minutes, turning frequently to ensure even cooking. Remove the pork and let it rest for 5 minutes before slicing it into thin strips.
  3. Prepare the Spinach:
    • Remove the tough stems from the spinach.
    • Heat a pan with a bit of olive oil and sauté the remaining minced garlic for 30 seconds. Add the spinach, season with salt and chili flakes, and cook for 2 minutes until wilted. Set aside.
  4. Assemble the Sandwiches:
    • On one slice of whole-grain bread, place several slices of the grilled pork, followed by sautéed spinach and thick slices of mozzarella.
    • Top with another slice of bread to complete the sandwich.
