Beef Stroganoff is a classic Russian dish that is both hearty and flavorful. It features tender strips of beef in a creamy sauce made with sour cream and a touch of tomato paste. Perfect for a family dinner, it pairs wonderfully with a variety of sides such as pasta, potatoes, or rice.
Ingredients
- 500 g beef sirloin or tenderloin, cut into strips
- 1-2 onions, finely chopped
- 1 tbsp all-purpose flour
- 1 tsp tomato paste
- 300 ml beef broth
- 220 g sour cream (15% fat)
- Salt, to taste
- Pepper, to taste
- 2 tbsp vegetable oil
Method
- Rinse the beef and pat it dry with paper towels. Lightly pound the meat and cut it across the grain into thin strips, about 5 mm thick.
- Heat the vegetable oil in a large skillet over medium-high heat. Add the beef strips in batches, cooking them for about 3 minutes per side until browned. Remove the beef from the skillet and set aside on a plate.
- In the same skillet, add the chopped onions and cook until they are golden brown.
- Sprinkle the onions with flour and cook for an additional minute, stirring constantly.
- Stir in the tomato paste and cook for another minute, then pour in the beef broth, mixing well to incorporate all the browned bits from the bottom of the skillet.
- Add the sour cream and stir until the sauce is smooth. Return the browned beef strips to the skillet and mix well with the sauce.
- Simmer the mixture for about 5 minutes, or until the beef is tender and the sauce has thickened. If the sauce becomes too thick, add a little more beef broth to reach the desired consistency.
- Season with salt and pepper to taste.
