Butternut Squash Soup is a wonderfully smooth and flavorful dish, perfect for warming up on chilly days. The natural sweetness of the squash is enhanced by aromatic garlic and a hint of nutmeg, creating a balanced and delicious soup. This recipe is easy to prepare and results in a rich, creamy texture that will be enjoyed by everyone.

Ingredients

  • 750 g butternut squash, peeled and cubed
  • 2 onions, finely chopped
  • 2 cloves garlic, minced
  • 500 ml vegetable broth
  • 500 ml water
  • 1⁄4 tsp ground nutmeg
  • 3 tbsp cream (optional for garnish)
  • Salt and pepper, to taste

Method

  1. In a large pot, bring the vegetable broth and water to a boil. Add the cubed butternut squash, chopped onions, and minced garlic to the pot.
  2. Once the mixture reaches a boil, reduce the heat and let it simmer for 15 minutes, or until the butternut squash is soft and tender.
  3. After the vegetables are cooked, remove them from the pot, keeping the broth aside. Blend the vegetables into a smooth puree using a blender or immersion blender. Gradually add the reserved broth until you achieve your desired consistency.
  4. Stir in the ground nutmeg, and season the soup with salt and pepper to taste. Reheat the soup on low heat if necessary.
  5. Ladle the soup into bowls and drizzle each serving with a swirl of cream, if desired. Serve with warm, crusty bread.
