Ingredients
- 200 g shredded iceberg lettuce
- 7 Armenian lavash sheets
- 200 g Greek yogurt (2% or plain)
- 500-600 g chicken breast
- 10-12 cherry tomatoes, sliced
- 200 g grated cheese
- 1 red onion, sliced into half-moons
- 4-6 pickled cucumbers, halved lengthwise
- 1-2 garlic cloves, minced
- 1 chili pepper, sliced
- 700 g potatoes
- 2 tsp garlic powder
- Salt and black pepper, to taste
- ⅓ tsp cumin
- 1 tsp smoked sweet paprika
- 1 tsp red pesto
- 6-7 tbsp olive oil
Method
- Prepare the potatoes: Preheat the oven to 190°C (375°F). Peel and slice the potatoes in half, then cut into wedges. Place them in a bowl, season with salt, pepper, and garlic powder, and drizzle with 3-4 tablespoons of olive oil. Toss to coat and spread them on a baking tray lined with parchment paper. Bake for 20-25 minutes until golden and tender.
- Cook the chicken: Cut the chicken breast into 2 cm strips and place them in a bowl. Season with salt, pepper, cumin, 1 teaspoon of smoked paprika, and garlic powder. Add 3-4 tablespoons of olive oil and mix well. Heat a grill pan over medium heat and cook the chicken for about 4-5 minutes on each side until fully cooked. Allow the chicken to rest for 5 minutes, then cut into small pieces.
- Make the sauce: In a bowl, combine the Greek yogurt, red pesto, minced garlic, and season with salt and pepper. Mix well until smooth.
- Assemble the kebabs: Take a lavash sheet (approximately 35×40 cm) and place a smaller piece (10×20 cm) in the center, leaving a 5 cm space from the edges. Layer the cooked chicken, sauce, baked potatoes, grated cheese, iceberg lettuce, cherry tomatoes, red onion, pickled cucumbers, and chili slices on top of the small lavash piece. Fold the edges over the filling and roll tightly.
- Grill the kebabs: Heat a grill pan over high heat. Place the assembled kebabs in the pan and grill for about 3-4 minutes on each side until crispy and golden.
