Ingredients
● 1 whole chicken
● 1 large carrot
● 1 onion
● 5 sprigs of parsley
● 5 sprigs of dill
● 150 g egg noodles
● Salt, to taste
● Ground black pepper, to taste
Method
1.Remove the chicken breasts and excess fat from the whole chicken. Set them aside to use for another dish, such as chicken patties.
2. Place the chicken carcass in a large pot with 3 liters of cold water and bring it to a boil. Once the water is boiling, reduce the heat to medium so it barely simmers. Add salt, a pinch of ground black pepper, and the raw vegetables: one large onion and one large carrot (cut into pieces if preferred). After about 10 minutes, add a few sprigs of chopped parsley and dill. Let the broth simmer gently for about 40 minutes to an hour, tasting occasionally to check for flavor.
3. When the broth is ready, remove the chicken from the pot and set it on a plate. Sprinkle the chicken with salt and cover it to allow it to rest and cool down. Once cool, shred the chicken into bite-sized pieces.
4. Strain the broth, then bring it back to a boil. Add the egg noodles and cook for about 5 minutes, or until the noodles are tender.
5. Ladle the soup into bowls and garnish with fresh chopped parsley and dill. You can also add some of the cooked carrot from the broth for extra flavor and color.
