Ingredients

  • 2 chicken breasts (sliced into thin fillets)
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 4 tbsp butter
  • 4-5 tbsp vegetable oil
  • 2 tbsp capers
  • Juice of half a lemon
  • Zest of one lemon
  • 250 ml water or chicken broth
  • Flour for coating the chicken
  • Fresh parsley, chopped
  • Salt and black pepper to taste

Method

  1. Slice each chicken breast in half horizontally to create thinner fillets. Season with salt and pepper, then dredge in flour.
  2. Heat 1 tbsp of butter and 2 tbsp of vegetable oil in a skillet over medium-high heat. Sear the chicken for about 2 minutes per side until golden brown. Set the chicken aside on a plate.
  3. In the same skillet, add the remaining butter and oil. Sauté the chopped onion until softened, then stir in the minced garlic and cook briefly until fragrant.
  4. Add the water (or chicken broth) and let it simmer for 3-4 minutes. Stir in the lemon juice, zest, capers, and parsley. Season with salt and pepper.
  5. Return the chicken fillets to the skillet, letting them heat through in the sauce for another few minutes.
  6. Serve hot, spooning the lemon butter sauce over the chicken. Enjoy this deliciously tangy and savory dish!
