Chocolate Lava Cake, also known as Chocolate Fondant or Molten Chocolate Cake, is a luxurious dessert that features a rich, soft exterior with a gooey, flowing chocolate center. Ingredients
- 180 grams dark chocolate (58% or 75% cocoa)
- 100 grams powdered sugar
- 80 grams all-purpose flour
- 100 grams butter
- 4 large eggs
- 1 teaspoon vanilla extract
- A pinch of salt
- For decoration: powdered sugar, mint leaves
Method
- Begin by chopping the dark chocolate and butter into small pieces. Place them in a heatproof bowl over a pot of simmering water (double boiler) and let them melt together, stirring occasionally.
- Preheat your oven to 180°C (350°F).
- In a separate bowl, crack the eggs and add the vanilla extract. Whisk them together vigorously for a few seconds until combined.
- Once the chocolate and butter mixture has melted, remove it from the heat and let it cool slightly. Stir in the powdered sugar and mix for about 30 seconds until well combined.
- Pour the chocolate mixture into the bowl with the whisked eggs and mix until smooth. Then, add the pinch of salt and flour, folding gently until no streaks remain.
- Grease five aluminum ramekins (or muffin cups) with butter. Divide the batter evenly among the prepared ramekins.
- Bake the cakes in the preheated oven for 14 minutes. Once done, remove them and let them sit for about 2 minutes.
- To serve, carefully invert each cake onto a plate, dust with powdered sugar, and garnish with mint leaves. When you cut into the cake, the warm chocolate should flow out like molten lava.
