Crunchy Green Salad is a delightful spring dish that combines fresh greens with a creamy dressing. It serves as a refreshing appetizer or a perfect side dish to complement heavier main courses like grilled meats. Ingredients
For the Salad:
- 1 small head of lettuce
- 1 cucumber (or half a larger one)
- 3 green onion stalks
- 4-5 sprigs of fresh dill
- 4-5 sprigs of fresh parsley
For the Dressing:
- 3 tablespoons sour cream
- 2 teaspoons apple cider vinegar or white wine vinegar
- 1-2 teaspoons sugar (to taste)
- ½ teaspoon salt
- 5-6 tablespoons cold water
- 1 small garlic clove (optional)
- 1 teaspoon za’atar (optional)
Method
- Begin by trimming the root end of the lettuce, cucumber, and green onions. If using garlic, peel the clove. Rinse all the ingredients thoroughly, paying special attention to the lettuce and green onions. Also, give the dill and parsley a good rinse under cold water.
- Tear the lettuce leaves into bite-sized pieces and place them in a salad bowl. Slice the cucumber into thin rounds or half-moons. Chop the green onions (both bulb and greens) into thicker rounds. Finely chop the dill and parsley, adding them all to the bowl with the lettuce.
- Next, prepare the dressing. Mash the garlic clove (if using) and place it in a separate bowl. Add the sour cream, vinegar, sugar, salt, and cold water to the bowl. If you have za’atar, include it now. Mix everything well until the dressing is smooth and creamy. Adjust the seasoning with more sugar, vinegar, or salt to taste.
- Pour the dressing over the salad greens and toss gently to combine. Allow the salad to sit for about 5 minutes for the flavors to meld together before serving. Enjoy your crunchy green salad as a light and refreshing addition to your meal!
