Ingredients

For the Eggs Benedict:

  • 2 eggs
  • 1 small onion
  • 50 g bacon
  • 2 slices of bread (for toasting)
  • 50 g unsalted butter
  • 1 tbsp vinegar

For the Hollandaise Sauce:

  • 65 g unsalted butter
  • 3 egg yolks
  • 1 tsp water
  • 1 tbsp lemon juice
  • A pinch of salt

Method

  1. Prepare the Ingredients: Begin by peeling and finely chopping the onion. Cut the bacon into small pieces.
  2. Poach the Eggs: In a saucepan, bring water to a gentle boil and reduce the heat. Add 1 tbsp of vinegar to the water. Create a whirlpool by stirring the water, then carefully crack one egg into the center. Poach the egg for 2-3 minutes until the white is set but the yolk remains runny. Remove the egg with a slotted spoon and place it on a paper towel to drain.
  3. Toast the Bread and Cook the Bacon: In a skillet, melt the butter and toast the bread slices until golden brown. In the same skillet, add the chopped onion and bacon, cooking until the bacon is crispy and the onion is translucent.
  4. Make the Hollandaise Sauce: Set up a double boiler by placing a heatproof bowl over a pot of simmering water. In the bowl, melt 65 g of butter while stirring with a whisk. In a separate bowl, whisk together the 3 egg yolks with 1 tsp of water. Gradually pour the yolks into the melted butter, whisking continuously. Add 1 tbsp of lemon juice and a pinch of salt, whisking until the sauce is thick and creamy.
  5. Assemble the Dish: On each toasted slice of bread, layer the bacon and onion mixture, then top with the poached egg. Drizzle generously with the hollandaise sauce and serve immediately.

Enjoy your homemade Eggs Benedict, a breakfast that perfectly balances flavors and textures for an ideal start to your day!
