Ingredients
- 690g chickpeas (cooked or canned, drained)
- 1 English cucumber
- 6 tomatoes
- 100g feta cheese
- 60ml lemon juice
- 60ml olive oil
- 1 teaspoon Dijon mustard
- ½ teaspoon honey
- 4 sprigs fresh dill
- Salt, to taste
- Ground black pepper, to taste
Method
- Start by preparing the chickpeas. If using dried chickpeas, soak them overnight and cook until tender. If using canned chickpeas, simply drain and rinse them, then add them to a large mixing bowl.
- Chop the cucumber into quarters and dice the tomatoes into bite-sized pieces. Crumble or cube the feta cheese. Combine the cucumber, tomatoes, and feta with the chickpeas in the bowl, gently mixing them together.
- In a separate small bowl, whisk together the lemon juice, olive oil, Dijon mustard, honey, and chopped dill. Season the dressing with salt and ground black pepper to taste.
- Drizzle the dressing over the salad and toss everything together until evenly coated.
