Ingredients

  • Ground beef: 150 grams
  • Tomato paste: 1 tablespoon
  • Ground coriander: 1/2 teaspoon
  • Canned red beans: 200 grams
  • Carrot: 1, grated
  • Tomato: 1, sliced
  • Lettuce: 1/4 large head, shredded
  • Cheddar cheese: 30 grams, shredded
  • Salt: to taste

Method

  1. Prepare the Tortillas:
    • Sift the flour with salt, then mix in the lard or vegetable oil until well combined.
    • Gradually add 50 ml of warm water and knead to form a soft, smooth dough.
    • Shape the dough into a ball, cover with a damp cloth, and let rest for 10 minutes.
    • Divide the dough into 6 pieces and roll each piece into a thin, round tortilla.
  2. Cook the Tortillas:
    • Heat a dry skillet over high heat. Cook each tortilla for about 30 seconds on each side until slightly puffed and golden.
    • Stack the cooked tortillas and wrap them in foil to keep warm.
  3. Prepare the Beef Filling:
    • Heat vegetable oil in a pan over medium heat. Add the chopped onion and cook for about 3 minutes until softened.
    • Add the ground beef and cook, breaking it up with a spatula, until browned and the liquid has evaporated.
    • Stir in the tomato paste, ground coriander, and salt. Add the canned red beans and cook for another 3-4 minutes, stirring occasionally.
  4. Prepare the Vegetables:
    • Peel and grate the carrot. Wash and slice the tomato. Shred the lettuce.
  5. Assemble the Tacos:
    • Place the tortillas on a baking sheet, slightly folded. Heat in a preheated oven at 180°C (350°F) for 5 minutes.
    • Fill each tortilla with the beef and bean mixture, then top with grated cheese and grated carrot.
    • Add slices of tomato and shredded lettuce.
