Pickled Carrot Noodles are a delightful and tangy side dish inspired by the popular Korean-style carrot salad. Ingredients

  • 1 kg carrots
  • 1 tsp salt
  • 1 tsp sugar
  • 1 tsp freshly ground black pepper
  • 1 tsp ground coriander
  • ½ tsp turmeric
  • ½ tsp mustard seeds
  • 1 tsp marjoram
  • 2 cloves garlic
  • 50 ml apple cider vinegar
  • 80 ml vegetable oil

Method

  1. Start by peeling the carrots and then grate them using a Korean-style grater to create thin noodles.
  2. In a large bowl, sprinkle the grated carrots with salt and mix well.
  3. Create a small well in the center of the carrots and add the sugar.
  4. Press the garlic cloves through a garlic press and add them to the carrots.
  5. Lightly toast the coriander seeds in a pan, then crush them and add to the mixture.
  6. Heat the vegetable oil in a separate pan until it starts to shimmer (do not let it boil). Once hot, remove from heat and pour it over the carrot mixture.
  7. Add the apple cider vinegar to the carrots and mix everything thoroughly.
  8. Pack the carrot mixture into a clean jar and pour any excess juice over the top.
  9. Seal the jar and place it in the refrigerator for 24 hours to allow the flavors to meld.
