Potato leek soup is a creamy and comforting dish that highlights the gentle flavors of leeks and potatoes. Perfect as an appetizer or a light meal, this soup is easy to prepare and delivers a satisfying warmth. It’s an ideal choice for chilly days or as a delightful starter for any dinner party.
Ingredients
- 3 leeks, cleaned and sliced
- 3 tablespoons olive oil
- 6 potatoes, diced
- 1 broth cube
- Salt, to taste
- 2 liters water
Method
- Begin by washing the leeks thoroughly, trimming the ends, and slicing them into 2 cm pieces. Dice the potatoes into cubes.
- In a large pot, heat the olive oil over medium heat. Add the sliced leeks and cook, stirring occasionally, for about 10 minutes until they turn golden brown.
- Pour in 2 liters of water and add salt (keeping in mind that the broth cube will also add salt). Bring the mixture to a boil and cook for 5 minutes.
- Add the diced potatoes to the pot and simmer for approximately 30 minutes, or until the potatoes are soft.
- Crumble the broth cube and mix it with 2-3 tablespoons of the soup before adding it back into the pot. Stir well and serve immediately.
For an enhanced flavor, feel free to substitute the broth cube with homemade broth by adding enough water to reach 2 liters and pouring it into the pot with the leeks. Enjoy your delicious potato leek soup!
