Prawn crackers are a delicious and crunchy snack, perfect for enjoying on their own or as an accompaniment to a variety of dishes. They are typically made from a blend of prawn, tapioca flour, and seasonings, offering a delightful burst of flavor with each bite. This recipe is simple and ideal for sharing with family and friends.
Ingredients
- 20 sheets of rice paper for spring rolls
- 1 large bell pepper
- 2 carrots
- 2–3 fresh cucumbers
- 100 g young snow peas
- A bunch of any leafy green salad
- For the sauce:
- 100 g Thai sweet sauce
- Juice of half a lime
- 3 tablespoons of soy sauce
- 10 g sesame seeds
- 1 teaspoon powdered sugar
- 6 tablespoons unrefined sunflower oil or any other of your choice
- A small bunch of green onions
Method
- Tear the leafy greens into small pieces and julienne the bell pepper, carrots, and cucumbers into thin strips. Combine all the filling ingredients in a bowl.
- In a separate bowl, pour warm water and soak a rice paper sheet for a few seconds until it softens. Remove it and place it on a flat plate or board. Add a handful of salad and the cut vegetables to the rice paper, then roll it up like a burrito. Repeat this process with the remaining sheets to make more spring rolls.
- For the sauce, mix all the ingredients together, adding finely chopped green onions. Serve the sauce separately alongside the prawn crackers. Enjoy your homemade snack!
