This recipe simplifies things by using common rice and adds an exotic twist with the zest of three citrus fruits and coconut milk. The result is a creamy and tender pudding that’s sure to impress!
Ingredients
- 500 ml milk (1.5% fat)
- 50 ml coconut milk
- 350 g cooked rice
- ½ tsp vanilla sugar
- Zest of 1 lemon
- Zest of ½ orange
- Zest of 1 lime
- 2 eggs + 1 egg white
- 100 g sugar
Method
- Preheat the oven: Set your oven to 180°C (350°F). Ensure the rice is cooked and cooled beforehand. Grate the zest from the lemon, orange, and lime, making sure to only take the outer layer to avoid bitterness.
- Prepare the milk mixture: In a small saucepan, heat the milk and add the vanilla sugar, coconut milk, and citrus zest. Simmer on low heat for about 5 minutes, then remove from heat.
- Mix eggs and sugar: In a separate bowl, whisk together the eggs and egg white with the sugar until well combined. Gradually stir in the hot milk mixture and mix well.
- Combine rice and milk mixture: Spread the cooked rice evenly in a baking dish. Pour the milk and egg mixture over the rice.
- Bake in a water bath: Place the baking dish into a larger dish filled with water to create a water bath. Bake in the preheated oven for 45 to 60 minutes.
