Ingredients

  • 500 ml milk (1.5% fat)
  • 50 ml coconut milk
  • 350 g cooked rice
  • ½ tsp vanilla sugar
  • Zest of 1 lemon
  • Zest of ½ orange
  • Zest of 1 lime
  • 2 eggs + 1 egg white
  • 100 g sugar

Method

  1. Preheat the oven: Set your oven to 180°C (350°F). Ensure the rice is cooked and cooled beforehand. Grate the zest from the lemon, orange, and lime, making sure to only take the outer layer to avoid bitterness.
  2. Prepare the milk mixture: In a small saucepan, heat the milk and add the vanilla sugar, coconut milk, and citrus zest. Simmer on low heat for about 5 minutes, then remove from heat.
  3. Mix eggs and sugar: In a separate bowl, whisk together the eggs and egg white with the sugar until well combined. Gradually stir in the hot milk mixture and mix well.
  4. Combine rice and milk mixture: Spread the cooked rice evenly in a baking dish. Pour the milk and egg mixture over the rice.
  5. Bake in a water bath: Place the baking dish into a larger dish filled with water to create a water bath. Bake in the preheated oven for 45 to 60 minutes.
