Spanakopita is a delicious Greek pastry that features a savory filling of fresh spinach and cheese, all wrapped in flaky phyllo dough. Ingredients

  • 7 sheets of phyllo dough
  • 300 g fresh spinach
  • 150 g feta cheese
  • 70 g grated cheese (such as mozzarella or a similar type)
  • 2 eggs
  • 1 bunch of fresh dill
  • 2 sprigs of fresh basil
  • 1 clove of garlic
  • 2 tablespoons vegetable oil
  • Freshly ground black pepper (to taste)
  • Salt (to taste)

Method

  1. Start by washing and chopping the fresh spinach. Sauté it in a pan with vegetable oil for 1–2 minutes until wilted.
  2. In a mixing bowl, add the sautéed spinach, beaten eggs, chopped dill, chopped basil, black pepper, and minced garlic. Mix well.
  3. Crumble the feta cheese into the spinach mixture, then add the grated cheese. Stir to combine, and season with salt if necessary.
  4. Lay the phyllo dough sheets on a clean surface, brushing each sheet with melted butter or oil. Place a portion of the spinach filling in the center of the stacked sheets.
  5. Fold the phyllo dough over the filling to form a pie, sealing the edges. Brush the top with more melted butter or oil.
  6. If desired, sprinkle sesame seeds on top and cover with another sheet of phyllo.
  7. Preheat your oven to 180°C (about 350°F) and bake the pie for 20–25 minutes, or until golden brown and crispy.
  8. Once baked, let the spanakopita cool slightly before slicing. Serve warm and enjoy this flavorful Greek treat!
