Ingredients
- 7 sheets of phyllo dough
- 300 g fresh spinach
- 150 g feta cheese
- 70 g grated cheese (such as mozzarella or a similar type)
- 2 eggs
- 1 bunch of fresh dill
- 2 sprigs of fresh basil
- 1 clove of garlic
- 2 tablespoons vegetable oil
- Freshly ground black pepper (to taste)
- Salt (to taste)
Method
- Start by washing and chopping the fresh spinach. Sauté it in a pan with vegetable oil for 1–2 minutes until wilted.
- In a mixing bowl, add the sautéed spinach, beaten eggs, chopped dill, chopped basil, black pepper, and minced garlic. Mix well.
- Crumble the feta cheese into the spinach mixture, then add the grated cheese. Stir to combine, and season with salt if necessary.
- Lay the phyllo dough sheets on a clean surface, brushing each sheet with melted butter or oil. Place a portion of the spinach filling in the center of the stacked sheets.
- Fold the phyllo dough over the filling to form a pie, sealing the edges. Brush the top with more melted butter or oil.
- If desired, sprinkle sesame seeds on top and cover with another sheet of phyllo.
- Preheat your oven to 180°C (about 350°F) and bake the pie for 20–25 minutes, or until golden brown and crispy.
- Once baked, let the spanakopita cool slightly before slicing. Serve warm and enjoy this flavorful Greek treat!
