Stuffed bell peppers with quinoa make a delicious and nutritious meal, perfect for a hearty lunch or dinner. This recipe combines the wholesome goodness of quinoa with savory ground meat and vegetables, all baked together in sweet bell peppers.

Ingredients

  • 100–150 g quinoa
  • 3 sweet bell peppers
  • 1 onion
  • 2 tablespoons butter
  • 150 g ground meat (such as beef or turkey)
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon vegetable oil
  • 70–80 g cheese (such as cheddar or mozzarella)

Method

  1. Cook the quinoa according to package instructions, which typically takes about 15 minutes. Once cooked, let it cool.
  2. Slice the bell peppers in half lengthwise and remove the seeds. Chop one of the pepper halves finely and leave the remaining halves intact.
  3. In a pan, melt the butter and sauté the chopped onion until golden brown, about 5 minutes. Add the ground meat and chopped bell pepper to the pan, cooking until the meat is browned and the vegetables are tender, approximately 7–8 minutes.
  4. Mix the cooked quinoa with the meat and vegetable mixture. Season with salt and black pepper to taste.
  5. Stuff the bell pepper halves with the quinoa mixture and place them on a baking sheet greased with vegetable oil. Sprinkle the tops with shredded cheese.
  6. Bake in a preheated oven at 180°C (350°F) for about 25 minutes, or until the peppers are tender and the cheese is melted and bubbly.
