Stuffed bell peppers with quinoa make a delicious and nutritious meal, perfect for a hearty lunch or dinner. This recipe combines the wholesome goodness of quinoa with savory ground meat and vegetables, all baked together in sweet bell peppers.
Ingredients
- 100–150 g quinoa
- 3 sweet bell peppers
- 1 onion
- 2 tablespoons butter
- 150 g ground meat (such as beef or turkey)
- Salt, to taste
- Black pepper, to taste
- 1 tablespoon vegetable oil
- 70–80 g cheese (such as cheddar or mozzarella)
Method
- Cook the quinoa according to package instructions, which typically takes about 15 minutes. Once cooked, let it cool.
- Slice the bell peppers in half lengthwise and remove the seeds. Chop one of the pepper halves finely and leave the remaining halves intact.
- In a pan, melt the butter and sauté the chopped onion until golden brown, about 5 minutes. Add the ground meat and chopped bell pepper to the pan, cooking until the meat is browned and the vegetables are tender, approximately 7–8 minutes.
- Mix the cooked quinoa with the meat and vegetable mixture. Season with salt and black pepper to taste.
- Stuff the bell pepper halves with the quinoa mixture and place them on a baking sheet greased with vegetable oil. Sprinkle the tops with shredded cheese.
- Bake in a preheated oven at 180°C (350°F) for about 25 minutes, or until the peppers are tender and the cheese is melted and bubbly.
