  • 0.3 jar of olives, pitted
  • 200g smoked bacon, thinly sliced

  • Salt, to taste
  • Black pepper, to taste
  • Dried dill, to taste

Method

  1. Prepare the pork: Rinse the pork tenderloin and pat it dry. Trim off any thick sinews. Season it generously with salt and pepper, rubbing the seasoning into the meat. Let it rest for 10 minutes.
  2. Make the filling: In the meantime, dice the bell pepper and peeled tomato. Season with salt, pepper, and dried dill. Pat the olives dry with a paper towel.
  3. Stuff the pork: Make a deep cut lengthwise into the tenderloin, ensuring not to cut all the way through. Open the cut and fill it with the diced vegetables. Line the olives in a row inside the cut. Close the tenderloin and secure the edges with toothpicks.
  4. Sear the pork: Heat a skillet with a bit of oil until hot. Place the tenderloin seam-side down and sear for 1 minute, then flip and sear the other side for another 30 seconds. Remove from heat and discard the toothpicks.
  5. Wrap in bacon: Lay out the bacon strips on a silicone mat or cutting board, aligning them to the length of the tenderloin. Place the tenderloin on one edge, top with cheese slices, and roll the bacon around it.
  6. Tie the roast: Use kitchen twine to tie the bacon-wrapped tenderloin securely, ensuring it holds its shape while cooking.
  7. Bake: Place the tenderloin on a foil-lined baking tray. Start in a cold oven and set the temperature to 100°C (212°F). Bake for 15 minutes, then increase the heat to 200°C (390°F) and bake for an additional 25 minutes, until the bacon is crispy and the cheese melts into the meat.
