Ingredients

  • 2g galangal (or ginger)
  • 3g dried lemongrass
  • 60g chicken thigh fillet, cut into small pieces
  • 25g fresh mushrooms, sliced
  • 2-3 asparagus stalks, cut into segments
  • 3 cherry tomatoes, halved
  • Green onions for garnish

Method

  1. In a saucepan, combine the chicken broth, water, chili paste, sugar, sesame oil, and coconut milk. Mix well and heat until the sugar dissolves, then reduce the heat to low.
  2. In a skillet, melt the butter over medium heat. Add the sliced galangal and dried lemongrass, sautéing for about a minute until fragrant.
  3. Add the chicken thigh pieces to the skillet and cook until they are lightly browned.
  4. Stir in the sliced mushrooms, asparagus segments, and halved cherry tomatoes.
  5. Transfer the mixture to the saucepan with the broth and allow it to heat for about a minute.
